RECIPE: Chocolate Chip, Banana, Maple Syrup, Oat Pancakes

With only two breakfasts left at uni this term, I had obviously meticulously planned out how to optimise what I have left in my fridge/cupboard. And last night I dreamt up this breakfast of champions. I was clearly also feeling particularly sassy as I found myself waking up to this this morning:

Charming.

So these pancakes definitely have the 'more is more' thing going on. But hey, it's the end of term SO THAT'S TOTALLY ALLOWED. 
Seriously you guys, I have made a lot of pancakes in my time (sorry Instagram followers), and I might even go as far as saying these are my best ever. A bold statement if there ever was one. Yes, we are still talking about pancakes.

BUT JUST LOOK AT THEM.
And they're not even that unhealthy...I mean, everyone knows dark chocolate has health benefits and maple syrup comes from a tree so it's basically a vegetable. #pancakelogic

I kind of just chucked stuff into a bowl so some of these measurements aren't 100% exact, but the great thing about pancake batter is if it's too runny just add some more flour, and if it's too thick just add some more milk :)

Ingredients (serves 2):
  • 50g self-raising flour
  • 1 tsp baking powder
  • 50g oats
  • 1 egg
  • 50-75ml milk (semi-skimmed, almond, or whatever you have)
  • 1 tsp vanilla extract
  • 3 tbsp greek yoghurt (I used low fat but any is fine)
  • 2 tbsp maple syrup (plus more to serve)
  • 1 ripe banana, mashed (plus more to serve)
  • 50g dark chocolate chips

Method:

  1. Give the oats a quick whizz in a blender to ground them up. (This isn't essential but I personally prefer to not have chunky whole oats in my pancakes.)
  2. Sieve the flour and baking powder into a large mixing bowl.
  3. Add the ground oats.
  4. Make a well in the middle of your dry ingredients and crack the egg into it.
  5. Add 50ml milk and whisk to form a thick batter.
  6. Mix in the vanilla, yoghurt, maple syrup and banana.
  7. If the batter seems too thick and stodgy, add some more milk.
  8. Fold in the chocolate chips.
  9. Wipe a frying pan with a bit of oil and put on high heat.
  10. Turn the heat down and pour serving spoons of your batter into the pan.
  11. Cook for a couple of minutes on each side, until golden brown.
  12. Serve with extra sliced banana and maple syrup. TA-DAH.
