RECIPE: Peanut Butter and Banana Flapjacks

THESE ARE GOOD YOU GUYS. HASHTAG SORRY NOT SORRY BECAUSE THESE ARE SO DARN GOOD YOU GUYS.

But seriously. Peanut butter + banana + chocolate = heaven. And you know it.
I think the fact that I was commissioned (not really) to make a second batch of these just from my Instagram photos says it all really.

Ingredients (makes approx. 12 flapjacks):
  • 75g light muscovado sugar
  • 140g peanut butter (I used smooth, but crunchy would add new levels of awesome)
  • 4 and a half tbsp runny honey
  • 1 ripe banana, mashed
  • 140g oats
  • 140g plain chocolate (ok, so I actually bought a 150g bar but I needed a pre-baking snack alright, JEEEZ.)
Method:
  1. Line a 15cm by 15cm baking tin.
  2. Preheat your oven to 180 degrees C.
  3. Heat the sugar, peanut butter and honey in a saucepan on low heat, mixing until smooth.
  4. Transfer into a large mixing bowl with the oats and mashed banana, and mix until all the oats are coated (you should end up with a giant blob (- technical term)).
  5. Place your batter/mixture/blob into the baking tin and press down with the back of a spoon until flat and even.
    Flapjacky goodness, ready to be baked.
  6. Bake for 12-15 mins, until golden brown but still with a bit of squidge.
  7. While it cools, break the chocolate into pieces and place in a bowl over a pan of simmering water.
  8. Stir the chocolate until fully melted.
  9. When your flapjacks are cool, generously spread the chocolate on top.
    Try to resist just eating this with a spoon.
    (You will need more than that.)
  10. Pop into the fridge until the chocolate is set (30 mins - 1 hour), and then cut into squares.
BOOMTOWN.
