RECIPE: Chocolate Biscuit Fridge Cake Rocky Road Thing...

What up internet.
So we've got a bit of a heatwave going on in the UK at the moment (or in my garden, at least), which I am LOVING. However because of this, the old parentals have turned off the AGA (so that our kitchen doesn't become a roasting tin), which means, my friends, when one (me) fancies a spot of Wednesday afternoon baking, the lack of oven may be seen as somewhat of an obstacle...
But of course we can't let that stop us, so what's the perfect cake for this uncharacteristically warm British summer? Fridge cake of course! Nom. 

The great thing about this is you can pretty much throw in whatever you have! But here's what I used.

INGREDIENTS:

  • 150g unsalted butter, softened (not essential, you're going to melt it anyway)
  • 100g dark chocolate, broken into pieces
  • 1 tbsp cocoa powder
  • 3 tbsps golden syrup
  • 200g digestive biscuits
  • handful of mini marshmallows*
  • handful of fudge chunks*
  • 100g milk chocolate*
Other suggestions:
  • raisins/other dried fruit
  • pecans/hazelnuts
  • nutella/peanut butter
  • malteasers/other cut-up chocolate bars
*So I had this awesome chocolate bar lying about that I somehow hadn't scoffed yet so thought I'd add it in, and that's where the marshmallows, fudge chunks and milk chocolate came from (I was originally envisioning this bar as chunks in the fridge cake but I think the milk chocolate kinda melted in. Either way, it tastes pretty great.) Instead of this you could obviously just add a normal chocolate bar + mini marshmallows + fudge chunks. 
METHOD:
  1. Grease and line a 20cm by 20cm baking tin (mine was actually 16cm by 16cm but I'm not sure how common that is...)
  2. Bring a pan of water to the boil and then turn down to a simmer.
  3. Put the butter, dark chocolate, cocoa powder and golden syrup in a big glass bowl and place it over the simmering water, making sure the bowl doesn't actually touch the water (don't ask me why, I have no idea).
  4. Keep stirring every now and then until it's all melted and mixed together.
  5. Put the digestive biscuits into a freezer bag and crush with a rolling pin into whatever size chunks you like.
  6. Add the biscuits, marshmallows, fudge and whatever else you want into the bowl and mix into the chocolate mixture (this is where I added the GNAW bar but the mixture was still warm so the chocolate melted into it).


  7. Pour your masterpiece into your baking tin and pop in the fridge for 2 hours/overnight/until it is completely set.
  8. Cut into pieces and devour while no-one's watching ;)
